Dario Wolos first launched Tacombi restaurant chain out of a roofless VW van in Playa del Carmen, Mexico about ten years ago. Since then, Tacombi has flourished into an award-winning New York City franchise offering traditional Mexican cuisine – also with locations in Miami and Washington D.C. It recently received $27.5 million funding from Shake Shack founder Danny Meyer’s investment fund to facilitate rapid expansion plans for Tacombi brand.
Tacombi aims to open 75 locations within five years. Luis Berenbau, Tacombi’s Director of Operations, has spearheaded efforts to incorporate technology in all locations, with the challenge being streamlining high volume transactions across them while remaining consistent across locations. Luis is working closely with a team of developers in creating a new platform specifically for Tacombi stores.
